Ingredients
1/2 bell pepper, cored and thinly sliced
1/2 cup mushrooms, sliced
1/2 zucchini, diced
2 tsp vegetable oil
1/2 cup pico de gallo
1 tsp taco seasoning
2 tortillas
1/2 avocado, thinly sliced
1/2 cup cheddar cheese, grated
Directions
  1. In bowl, toss bell peppers, mushrooms and zucchini with oil. In air fryer basket, spread vegetables across bottom in even layer. Cook at 375° F for 6 minutes. Vegetables should be soft but brown on edges. When vegetables are ready, transfer to bowl. Stir in the pico de gallo and taco seasoning. 
  2. Lay tortillas flat on work surface. Evenly divide avocado, cooked vegetables and cheddar cheese between tortillas. Fold tortillas over; press to close. Spray bottom of fryer basket with nonstick cooking spray. Also, spray tops of quesadillas. Place quesadillas in fryer basket. Cook at 375° F for 10 minutes. Check after 8 minutes to ensure quesadillas are browning evenly and not overcooked.
